Chausson aux pommes — the French apple "slipper". Spiced apple compote parcelled in puff pastry, scored on top for steam release and a leafy pattern, baked dark and glazed. The trick is the filling: thick, cold, and not too sweet, so the pastry stays the hero.

Be mindful of apple type. Granny Smith is good. Honeycrisp wasn't bad either.
Why the mix works: go roughly 50/50 tart and sweet. Tart (Granny Smith, Braeburn) holds its shape; sweet (Honeycrisp, Pink Lady, Fuji) breaks down into sauce. All tart = sharp and chunky. All sweet = mushy.
Filling must be cold and thick. This is the whole recipe. Wet filling blows out the seams; warm filling kills the lamination.
Freezer trick: assemble, glaze and score, then freeze on a tray uncovered. Once solid, bag them. Bake straight from frozen at 400°F for 30–35 minutes. Better than anything frozen you can buy.
Variations
Pear-cardamom — sub pears, swap cinnamon for cardamom and ginger.
Apple-frangipane — thin layer of almond or hazelnut frangipane under the apple. French boulangerie standard.
Apple-cheddar — 30 g grated sharp cheddar folded into the cooled filling. Sweet-savoury cult favourite.
Apple-bourbon-pecan — splash of bourbon at the end of the filling, fold in chopped toasted pecans.
Mixed berry — same method, berries instead of apples. Use less sugar and more cornstarch; berries are wetter.
