Apricot Chicken Pizza

Ingredients

Pizza Base (of choice)
1 cup Grilled Chicken Breast
4 slices Bacon Strips (optional)
½ Onion — finely diced
4 tbsp Green Pepper — finely diced
¼ cup Baby Spinach Leaves — roughly chopped
¾ cup Mozzarella — grated
Camembert Cheese — cut into ~15 strips
Spicy Apricot Sauce (of choice)

Prep:
Grill and tear up the chicken breast. Dice onion and green pepper. Cook then drain the bacon strips before roughly cutting into small pieces (if using).
Build the base:
With the base on the pizza pan/baking tray, apply a layer of spicy apricot sauce over it.
Layer:
Spread about half the mozzarella evenly over the sauce, followed by all the toppings as evenly as possible — leaving the camembert and remaining mozzarella until last.
Top:
Spread the remaining mozzarella over the top of the pizza, followed by the sliced camembert.
Bake:
Place pizza in a preheated oven on medium heat for 30 mins — varies depending on oven type.
Remove and serve.
Notes
This is a killer pizza because it's so different.
The catch is finding the right apricot sauce
— you don't want it too sweet or too spicy. I used to get an amazing one called Wattie's Bit on the Side but they stopped making it!
The camembert makes this — don't skip it.
