Bacon & Egg Mini Pies

Ingredients

1 tsp Oil
6 Rashers Bacon
Spring Onion
¼ Onion — diced
7 Eggs
½ cup Milk
½ cup Fresh Cream
2 tbsp Fresh Parsley
Pinch Nutmeg
Salt & Pepper
¼ cup Melted Butter
Filo Pastry — 10 sheets
Grated Cheese — for sprinkling
Method

Reset all
Heat pan, sauté bacon, onion, and spring onion. Set aside to cool.
Combine in a jug: milk, cream, parsley, nutmeg, one egg, and season with salt & pepper.
Build filo stacks:
Brush 1 sheet filo pastry with melted butter, then layer a second sheet on top. Repeat until the stack is 5 sheets high, then cut into squares. Prepare a second stack the same way.
Make stars:
Layer two squares of pastry on top of each other creating an eight-pointed star. Line pie/muffin tin with the stars.
Fill:
Evenly distribute bacon & spring onion into each case, then pour in the creamy mixture. Add a single whole egg to each pie and sprinkle a little grated cheese on top.
Bake:
Preheat oven to 200°C / 400°F. Bake for 10 minutes, then reduce heat to 180°C / 350°F and continue for another 10–15 mins. Remove and eat immediately.
