Carraba's Marsala Sauce

Ingredients

• 1 cup Dry Marsala Wine
• ½ cup (1 stick) Butter
• Pinch of Salt & Black Pepper
• ½ cup Mushrooms — sautéed

Method

1. Reduce wine: Add Marsala wine, salt, and pepper to a hot pan; reduce by 70%.
2. Build sauce: Several tablespoons at a time, stir in butter until the sauce is creamy.
3. Finish: Add hot sautéed mushrooms. Pour sauce over grilled steak.

Notes

• Amazing with steak. Mushrooms are optional if they're not your thing — the sauce is great either way.
• For extra flavour: Sauté the mushrooms in a little butter and layer them on the steak before pouring the sauce over the top.
