Spiral Pasta โ enough for 4 servings
Salted Boiling Water
Reserved Pasta Water โ about 1 cup
Pancetta & Chicken
Pancetta โ diced (or bacon)
Chicken Breast โ sliced or cubed
Salt & Pepper
Aromatics
1 Sweet Onion โ finely diced
Spring Onions (white parts) โ sliced
1โ2 cloves Garlic โ minced
Mushrooms โ sliced
1 t Tomato Paste โ optional
Squash
Butternut Squash โ small cubes
Olive Oil
Salt & Pepper
Creamy Sauce
1/2 cup Heavy Cream
1โ2 T Mascarpone
Parmesan โ grated
Pinch of Chili Flakes โ optional
Finishing
Spring Onion Greens
Extra Parmesan
Goat Cheese Crumble โ optional

Cook the pasta:
Boil spiral pasta in salted water until al dente. Reserve 1 cup pasta water.
Crisp the pancetta:
Render until crisp. Reserve pancetta, keep fat.
Sear the chicken:
Season and sear in pancetta fat. Reserve.
Build the flavour base:
Sautรฉ onion, mushrooms, spring onion whites, garlic. Optional: tomato paste.
Add the squash:
Microwave or pan-sear cubes until caramelised and tender.
Make it creamy:
Pour in cream, add mascarpone, parmesan. Loosen with pasta water. Season.
Bring it together:
Fold in chicken, pancetta, pasta.
Finish:
Top with spring onion greens, extra parmesan, optional goat cheese.
Notes
Swap:
Pancetta can be swapped for bacon.
Flavour:
Squash adds natural sweetness.
