Chicken, Mushroom & Spinach Penne with Spicy Tomato Cream

Ingredients

• 1 lb Chicken Breast Strips
• 1 medium Onion — diced
• 2 cups Mushrooms — sliced
• 2 cloves Garlic — minced
• 1 T Olive Oil
• 1 can (14 oz) Italian Crushed Tomatoes
• 1 T Chili Paste or Red Pepper Flakes
• 1/4 cup Cream
• 8 oz Penne
• 2 cups Baby Spinach
• 6 T Parmesan

Method

1. Build the base: Sauté onion, garlic, chicken, mushrooms in olive oil.
2. Add sauce: Add tomatoes and chili. Simmer 10 minutes.
3. Make it creamy: Add cream and spinach. Stir until spinach wilts.
4. Add pasta: Fold in cooked penne.
5. Finish: Top with parmesan.

Notes

• Heat level: Adjust chili to preference — start with 1/2 T if unsure.
• Balance: Cream mellows the spice while keeping the kick.
