1 lb Chicken Breast Strips
1 medium Onion — diced
2 cups Mushrooms — sliced
2 cloves Garlic — minced
1 T Olive Oil
1 can (14 oz) Italian Crushed Tomatoes
1/4 cup Cream
1 package (9–10 oz) Fresh Cheese Tortelloni
2 cups Baby Spinach
6 T Parmesan
Salt/Pepper/Basil

Sauté aromatics:
Sauté onion in olive oil until softened.
Build the base:
Add garlic, chicken, mushrooms. Cook until golden.
Add tomatoes:
Add crushed tomatoes, salt, pepper, basil. Simmer 10 minutes.
Make it creamy:
Add cream and spinach. Stir until spinach wilts.
Add tortelloni:
Fold in cooked tortelloni.
Finish:
Top with parmesan and broil 3–4 minutes until golden and bubbling.
Notes
Tortelloni:
Fresh tortelloni cooks in about 3–4 minutes.
Broil:
The broil step is optional but gives a nice gratinéed top.
