Chicken Tonight-Style Honey Mustard Chicken

Ingredients

• Chicken & Veg
• 2 large Chicken Breasts — sliced into thin strips
• 1 medium Onion — cut into chunky wedges
• 1 cup Julienne Carrots
• 1 T Neutral Oil
• 1/2 t Salt
• Black Pepper
• Sauce
• 3 T Dijon Mustard
• 4 T Clear Honey
• 1 T Soy Sauce
• 1/2 T Rice Vinegar or Lemon Juice
• 1/2 cup Water
• 1/4 cup Heavy Cream
• 1 t Cornstarch — mixed with 1 T water
• Tiny pinch of Turmeric — optional for colour
• To Serve
• 3 cups Cooked Rice
• Spring Onion or Red Onion slices

Method

1. Sear the chicken: Heat oil, season and sear until golden, 4–5 minutes. Remove.
2. Cook the vegetables: Sauté onions 2–3 minutes, add carrots another 2–3 minutes.
3. Build the sauce: Add Dijon, honey, soy, vinegar, and water. Bring to gentle simmer.
4. Thicken: Add cornstarch slurry, simmer 30–45 seconds.
5. Add the cream: Stir in cream, let bubble 1 minute.
6. Return chicken: Coat well, simmer 1–2 minutes.
7. Serve: Over hot rice with spring onion.

Notes

• Brightness: For more brightness, increase rice vinegar to 1 tbsp.
• Sweetness: Clear honey gives the most authentic sweetness.
