Pizza Dough or Puff Pastry
White Truffle Cream Sauce (store-bought)
1–1½ cups Butter-Poached Lobster Meat
1–1½ cups Gruyère — grated
½–1 cup Caramelised Onions or Leeks
Fresh Thyme
1–2 cups Watercress (or Spinach)
1 tsp Lemon Juice
1 tsp Olive Oil
Optional: Truffle Butter or Shaved Parmesan to finish

Heat oven:
475°F (245°C). Preheat stone or sheet.
Base:
Spread truffle cream thinly over stretched dough.
Top:
Add caramelised onions/leeks, gruyère, lobster, and thyme.
Bake:
8–12 minutes until cheese is molten and crust is golden.
Dress greens:
Toss watercress (or spinach) lightly with oil, lemon, and a pinch of salt.
Finish:
Scatter greens over pizza; drizzle truffle butter or add shaved parmesan. Rest 2 minutes before slicing.
Notes
Watercress vs spinach:
Recipe calls for watercress but spinach works great if watercress isn't your thing — make your own call on the flavour profile.
Shaved parmesan
is the go-to finisher over truffle butter.
A crowd-pleaser even if truffle isn't personally your fave!
