Mango Sticky Rice

Rice
1 cup Glutinous Rice
1 cup Water
Coconut Sauce
1 cup Coconut Milk
1/4 cup Sugar
1/4 t Salt
To Serve
1 ripe Mango โ sliced
Canned Peaches in juice โ optional winter swap
Toasted Sesame or Coconut Flakes โ optional
Method
Strike checked
Reset all
Rinse rice:
Until water runs mostly clear.
Cook rice:
Add rice + 1 cup water, simmer covered 12โ15 minutes until absorbed.
Make coconut sauce:
Warm coconut milk, sugar, and salt until dissolved.
Combine:
Pour 3/4 of coconut sauce over cooked rice. Cover and rest 10 minutes.
Serve:
With mango or peaches and remaining coconut sauce drizzled on top.
Notes
Winter swap:
Canned peaches work great in winter.
Resting:
The resting step is key.
Texture:
Toasted coconut flakes add nice textural contrast.
