Ingredients

1½ cups All-Purpose Flour
3½ tsp Baking Powder
1 tsp Salt
1 tbsp White Sugar
1¼ cups Milk
1 Egg
3 tbsp Melted Butter (unsalted)

Dry mix:
In a large bowl, sift together the flour, baking powder, salt, and sugar. Make a well in the centre.
Wet mix:
Beat the egg, add melted butter and beat lightly until blended, then lightly beat in the milk. Pour into the well and mix until smooth.
Cook:
Heat a lightly oiled griddle or frying pan over medium-high heat. Pour about ¼ cup of batter per pancake. Brown on both sides and serve hot.
Notes
Add ½ tsp vanilla
to your egg mixture for extra flavour.
Sift the flour twice
— makes for a much fluffier pancake.
Let your egg and milk sit at room temperature and use unsalted butter.
Don't overbeat the egg — keep it gentle for fluffy results.
For when a boxed pancake mix simply won't do!
