Two discs of puff pastry sealed around a filling, glazed dark, and scored in a curved spiral so the top reads like a polished sun. The classic filling is frangipane, but the shape welcomes anything β savoury mushroom, beef cheek, sweet pear, even leftover butter chicken if you're feeling rebellious. The shape is the brand. Master the shape, swap the filling forever.

Butter soft, never melted. Melted butter makes the frangipane split in the oven and weep oil. Out of the fridge an hour ahead, or paddle-beat cold butter on low until it gives. Soft means it dents under a finger but holds its shape.
The dome is the whole design. A flat puddle of filling gives you a flat, sad disc. Build an actual dome and the scoring reads as a sun.
Sheeter setup: ~5 mm for the first pass, then 3 mm for the final. Two passes at the final thickness gives a more uniform sheet than one aggressive squeeze. Keep the dough cold β back to the fridge if it starts feeling soft.
Keep egg wash off the cut edges. It seals the laminated layers together and stops them rising.
The "pitiful" rule: if the first one looks ugly, eat it warm in the kitchen with a fork and call it the chef's reward. The second always looks better. The shape is a learned skill, not a one-shot.
Variations, once you own the shape
Pear β poached pear dice folded into the frangipane, cardamom in the syrup.
Chocolate-frangipane β swap 30 g of the almond flour for cocoa, fold in dark chocolate chunks.
Mushroom and gruyΓ¨re β savoury: duxelles, caramelised shallot, gruyΓ¨re, thyme. No frangipane. Same shape, same scoring.
Beef cheek β the Michelin-tier showpiece. Slow-braised cheek shredded into its own reduced sauce, domed inside the puff. Jus on the side.
Butter chicken β heretical and absolutely going to work. Cold, reduced butter chicken filling, domed, scored and baked. Half NZ pie, half French patisserie.
