Samoan Potato Salad

6 Potatoes
6 tbsp Best Foods Mayonnaise
4 slices Beetroot — cubed (tinned)
4 Eggs — hard boiled
1 tsp Salt
2 pinches Pepper
Method

Peel and boil the potatoes until cooked — not too soft or they'll go mushy. Hard boil the eggs. Open the tin of beetroot and cube the slices — this is what gives it the colour.
When the potatoes are cooked, drain and cube. Leave to cool for about 10 mins. Peel the boiled eggs and slice.
Add mayonnaise to potatoes and stir through. Add the beetroot and seasoning, then transfer salad into a serving bowl and place sliced eggs on top.
Refrigerate.

Got this one from a colleague long ago and it's delicious!
Being in America now, this is a totally different take on potato salad — well worth it.
