Snowfall Citrus Dream Bars

Ingredients

• Base
• 1½ cups Shortbread Cookies — crushed
• 5 tbsp Melted Butter
• 2 tbsp Sugar
• Citrus Cream Layer
• ½ cup Fresh Orange Juice — strained
• ¼ cup Fresh Lemon Juice — strained
• Zest of 1 Orange & 1 Lemon
• 1 cup Sweetened Condensed Milk
• 1 cup Heavy Cream
• 1 tsp Vanilla Extract
• 2 tbsp Powdered Sugar
• Topping
• Candied Citrus Peel or Zest (optional)

Method

1. Make the base: Mix crushed shortbread cookies, melted butter, and sugar. Press firmly into a parchment-lined 8×8-inch pan.
2. Whip the cream: Whip heavy cream until soft peaks form. Set aside.
3. Make the citrus mix: In another bowl, combine strained citrus juices, zest, sweetened condensed milk, vanilla, and powdered sugar. Mix well.
4. Fold & spread: Gently fold the whipped cream into the citrus mixture until smooth. Spread evenly over the cookie base.
5. Chill: Refrigerate for 2–3 hours until firm.
6. Slice & serve: Cut into squares and garnish with candied citrus peel or fresh zest if desired. Serve chilled.

Notes

• Untested: Give it a go and update the rating.
• Strain the juice: Removing the pulp gives a silky-smooth texture.
• Chill longer for cleaner cuts: The firmer they are, the neater the squares.
• Use fresh citrus: Bright, fresh fruit makes all the difference in flavour and aroma.
